Arugula & Cannellini Bean Salad

Ingredients:

  • arugula
  • 1/2 can cannellini beans (rinsed and drained)
  • toasted pine nuts (optional)
  • sliced onions
  • homemade salad dressing: extra virgin olive oil, lemon juice, 2 minced garlic cloves, sea salt, black pepper, Italian seasoning, fresh parsley

Bean Salad

Ingredients:

  • 1 can lentils (rinsed and drained to remove excess salt)
  • 1 can of red kidney beans (rinsed and drained)
  • 1 can of chickpeas (rinsed and drained)
  • 1 red bell pepper (fresh, or from a jar)
  • finely chopped red onion
  • fresh parsley (optional) or dried herbs of your choice
  • apple cider vinegar
  • avocado oil
