Arugula & Cannellini Bean Salad
Ingredients:
- arugula
- 1/2 can cannellini beans (rinsed and drained)
- toasted pine nuts (optional)
- sliced onions
- homemade salad dressing: extra virgin olive oil, lemon juice, 2 minced garlic cloves, sea salt, black pepper, Italian seasoning, fresh parsley

Bean Salad
Ingredients:
- 1 can lentils (rinsed and drained to remove excess salt)
- 1 can of red kidney beans (rinsed and drained)
- 1 can of chickpeas (rinsed and drained)
- 1 red bell pepper (fresh, or from a jar)
- finely chopped red onion
- fresh parsley (optional) or dried herbs of your choice
- apple cider vinegar
- avocado oil
